&lt;p&gt;Now you can &quot;fancy up&quot; your corndogs for those picky relatives who don&#039;t eat off a stick.&lt;/p&gt;
&lt;h2&gt;Ingredients&lt;/h2&gt;
&lt;ul&gt;
&lt;li&gt;2 cups celery, thinly sliced&lt;/li&gt;
&lt;li&gt;2 tablespoons butter or margarine&lt;/li&gt;
&lt;li&gt;1 1/2 cups green onions, sliced&lt;/li&gt;
&lt;li&gt;1 1/2 lbs hot dogs&lt;/li&gt;
&lt;li&gt;2 eggs&lt;/li&gt;
&lt;li&gt;1 1/2 cups milk&lt;/li&gt;
&lt;li&gt;2 teaspoons rubbed sage&lt;/li&gt;
&lt;li&gt;1/4 teaspoon pepper&lt;/li&gt;
&lt;li&gt;17 ounces cornbread-muffin mix&lt;/li&gt;
&lt;li&gt;8 ounces sharp cheddar cheese, shredded&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;Directions&lt;/h2&gt;
&lt;ol&gt;
&lt;li&gt;In skillet, saute celery in butter for 5 min.&lt;/li&gt;
&lt;li&gt;Add onions; saute 5 min.&lt;/li&gt;
&lt;li&gt;Place in a large bowl; set aside. Cut hot dogs lengthwise into 1/4s, then cut into 1/3s.&lt;/li&gt;
&lt;li&gt;In the same skillet, saute hot dogs for 5 min. or until lightly browned; add to vegetables. set aside 1 cup.&lt;/li&gt;
&lt;li&gt;In a large bowl, combine eggs, milk, sage and pepper.&lt;/li&gt;
&lt;li&gt;Add the remaining hot dog mixture. Stir in corn bread mixes.&lt;/li&gt;
&lt;li&gt;Add 1 1/2 cup cheese. Spread into a shallow 3 quart baking dish.&lt;/li&gt;
&lt;li&gt;Top with reserved hot dog mixture and remaining cheese. Bake, uncovered, at 400 degrees for 30 min. or until golden brown.&lt;/li&gt;

&lt;p&gt;NOTES : I just use my own corn bread recipe.&lt;/p&gt;

 <title>PBR Batter Corndogs</title>

&lt;h2&gt;Dry Ingredients&lt;/h2&gt;
&lt;ul&gt;
&lt;li&gt;1 cup all-purpose flour&lt;/li&gt;
&lt;li&gt;2/3 cup yellow cornmeal&lt;/li&gt;
&lt;li&gt;2 tablespoons dry, unhopped malt extract&lt;/li&gt;
&lt;li&gt;1 1/2 teaspoons baking powder&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;Liquid Ingredients&lt;/h2&gt;
&lt;ul&gt;
&lt;li&gt;1/2 cup buttermilk&lt;/li&gt;
&lt;li&gt;1/4 cup pabst blue ribbon beer&lt;/li&gt;
&lt;li&gt;1 large egg&lt;/li&gt;
&lt;/ul&gt;
&lt;h2&gt;And The Rest&lt;/h2&gt;
&lt;ul&gt;
&lt;li&gt;8-pack of hot dogs&lt;/li&gt;
&lt;li&gt;Wooden skewers&lt;/li&gt;
&lt;li&gt;2 cups of more of cooking oil&lt;/li&gt;
&lt;/ul&gt;
&lt;ol&gt;
&lt;li&gt;Mix the dry ingredients together in a mixing bowl. &lt;/li&gt;
&lt;li&gt;In a seperate dish, beat together the egg, beer, and buttermilk until frothy. &lt;/li&gt;
&lt;li&gt;Add egg mixture to dry ingredients and blend until batter thickens. &lt;/li&gt;
&lt;li&gt;Wait 5 more minutes for the batter to set up, if necessary.&lt;/li&gt;
&lt;li&gt;Skewer hot dogs. &lt;/li&gt;
&lt;li&gt;Heat oil to 350F. &lt;/li&gt;
&lt;li&gt;Pour batter mix into a tall glass. &lt;/li&gt;
&lt;li&gt;Dunk one dog at a time into batter mix, swirl, lift and let excess batter drip off back into the glass. &lt;/li&gt;
&lt;li&gt;Lay the battered dogs (just a few at a time) down into the oil and turn until they are golden brown. &lt;/li&gt;
&lt;li&gt;Remove and drain on paper towels.&lt;/li&gt;

 <title>Deviled Dogs</title>

&lt;li&gt;5 corn dogs&lt;/li&gt;
&lt;li&gt;10 tater tots&lt;/li&gt;
&lt;li&gt;1/4 cup shredded Cheddar cheese&lt;/li&gt;
&lt;li&gt;2 Tbs Mayonnaise&lt;/li&gt;
&lt;li&gt;Salt and pepper to taste&lt;/li&gt;
&lt;li&gt;Paprika
&lt;/li&gt;&lt;/ul&gt;
&lt;ol&gt;
&lt;li&gt;Bake the corndogs amd tater tots according to package directions.&lt;/li&gt;
&lt;li&gt;When corndogs are cool enough to handle, remove the sticks, and split in half lengthwise.
&lt;/li&gt;&lt;li&gt;Remove the hot dog part, leaving the cornbread shell intact. &lt;/li&gt;
&lt;li&gt;Put the dogs, tots, cheese, mayo, salt and pepper into a food processor and process until smooth.&lt;/li&gt;
&lt;li&gt;Fill each corn shell with an equal amount of the potato mixture. If you have a pastry bag, use it!&lt;/li&gt;
&lt;li&gt;Sprinkle paprika over the top.&lt;/li&gt;
&lt;li&gt;Return to the oven, and bake until top is browned, about 5 minutes. &lt;/li&gt;

&lt;p&gt;1 gallon peanut oil&lt;br /&gt;
1 cup yellow cornmeal&lt;br /&gt;
1 cup all-purpose flour&lt;br /&gt;
2 teaspoons kosher salt&lt;br /&gt;
1 teaspoon baking powder&lt;br /&gt;
1/4 teaspoon baking soda&lt;br /&gt;
1/2 teaspoon cayenne pepper&lt;br /&gt;
2 tablespoons (approximately 1 large) jalapeno pepper, seeded and finely minced&lt;br /&gt;
1 (8.5-ounce) can cream-style corn&lt;br /&gt;
1/3 cup finely grated onion&lt;br /&gt;
1 1/2 cups buttermilk&lt;br /&gt;
4 tablespoons cornstarch, for dredging&lt;br /&gt;
8 beef hot dogs&lt;/p&gt;
&lt;p&gt;Special equipment: 8 sets chopsticks, not separated&lt;/p&gt;
&lt;p&gt;Pour oil into a deep fryer or large heavy pot and heat to 375 degrees F. In a medium mixing bowl, combine the cornmeal, flour, salt, baking powder, baking soda, and cayenne pepper. In a separate bowl, combine the jalapeno, corn, onion, and buttermilk. Add the dry ingredients to the wet ingredients all at once, and stir only enough times to bring the batter together; there should be lumps. Set batter aside and allow to rest for 10 minutes.&lt;/p&gt;
&lt;p&gt;Scatter the cornstarch into a dry pie pan. Roll each hot dog in the cornstarch and tap well to remove any excess.&lt;/p&gt;
&lt;p&gt;Transfer enough batter to almost fill a large drinking glass. Refill the glass as needed. Place each hot dog on chopsticks, and quickly dip in and out of the batter. Immediately and carefully place each hot dog into the oil, and cook until coating is golden brown, about 4 to 5 minutes. With tongs, remove to cooling rack, and allow to drain for 3 to 5 minutes.&lt;/p&gt;

 <title>Basic Corndog Recipe</title>

&lt;p&gt;1 egg, beaten&lt;br /&gt;
1/4 c. milk&lt;br /&gt;

1/4 tsp. salt&lt;br /&gt;
1/2 c. whole wheat flour&lt;br /&gt;
1/2 tsp. baking powder&lt;br /&gt;
1 tbsp. sugar&lt;/p&gt;
&lt;p&gt;Mix together all ingredients. Dip wieners in the batter and fry in hot oil until brown.&lt;/p&gt;
